Bemerkungen Ingredients Praline:
30 gr. almonds without shell
30 g sugar
70 g almond paste 100% (without sugar)
110 g milk chocolate
120 g dark chocolate (54.5%)
60 g cream (min. 30% fat)
50 g unsalted butter at room temperature
1 orange, preferably organic
100 g Cacao powder or powdered sugar
around 20 candied cherries
600 g dark chokolate (54,5%), will be used to cover the finished praline, estimated quantity
250 g ready to roll marzipan (Marzipanrohmasse)

Equipment:
1 Chocolate Mould (Polycarbonat or silicon)
- silicon mat or parchment paper
- bowls
- Fork and spoon
- Cutting board
- confectionar bag
- plastic wrap
- Resealable Bags
- Rolling pin or hammer
- Thermometer
- small saucepan
- frying pan
- Scales
to melt the chocolate we'll use either an microwave or an bain-marie (double boiler). It can be substituted with a bowl that perfectly fits a pan.

Christmas is coming and pralines are always a good idea, whether as a gift, or as a dessert for your guests, or as side for a coffee.
Making pralines might seem complicated, but with the right techniques you will easily make them at home without the need for expensive equipment. In this class, you will learn to work with chocolate, make the fillings and prepare the pralines. There will be 3 flavors: orange truffle, cherry- marzipan bonbon and crispy almond bonbon.
